3 "Infinity Medium" Recipes

Hi friend!

Are you looking at this email title going "WTF is Infinity Medium?" I'm sure you're not the only one. Stick with me and I'll explain:

By the end of January, the excitement of a fresh start can fade, routines can feel heavy, and even the best intentions around healthy eating start to wobble. This is usually the point where we think we need more motivation — when what we really need is less pressure.

This is your reminder that staying the course doesn’t mean being perfect. It means choosing what supports you, even when energy is low.

The other day on Instagram I found this amazing reel that really hit home for me, and I could not say it better. Whether you're talking about 75Hard, or Whole30, or any other super-restrictive program, it doesn't matter. The point is this: progress over perfection. Here's what Kevin Pulley had to say in his reel:

"Last year I did 75 Hard, and never again. It wasn't even all that hard, it was just mostly inconvenient. So since then, I've been doing Infinity Medium. And the rules are:

  • One workout per day. And if you're feeling beat down, stretching or walk, that counts as a workout.
  • We're gonna eat a whole foods diet. But we're gonna relax it on birthdays, holidays, social gatherings, stuff like that.
  • We're only gonna drink socially. We ain't drinking beers and wine and shots and cocktails in the house alone. Only outside, with your folk.
  • Read 10 pages a day, if you can, if you want to. But if not: audiobooks, podcasts, good to go.
  • We're gonna hydrate adequately. Drink enough water to support whatever activity you got going on. You don't need a whole gallon every single day.

Infinity Medium. Doing it for the rest of my life. Let's go."

So - if you're feeling in a January slump, having trouble staying the course with whatever it was you decided to start in January, don't worry. You've got the rest of your life to practice staying the course.

And when decision fatigue hits, simplicity is a form of self-care.

To make things easier, here are 3 simple, healthy, reliable recipes from the blog to carry you through Infinity Medium - and beyond.

Super Simple Chicken Stir-Fry

A bag of frozen cauli rice. A bag of frozen Chinese stir-fry veg. A rotisserie chicken from the grocery store. The most effort you have to make is whisking together a few ingredients for the sauce. So perfect for the days when you can't even. Top with some sliced almonds and green onions to make her look fancy. Get the recipe here.

Creamy Chicken Poppyseed Casserole

This is one of my favorite comfort foods. It's hearty and fills you up. It's low carb, because spaghetti squash. And it's delicious because crunchy buttery, poppyseed topping. Delicious is often made up of mostly healthy and a little bit extra, and this one's here to prove it. Get the recipe here.

Dairy Free Creamy Tomato Soup

I know, you're skeptical. How could she be creamy AND dairy free? Well, trust me, its possible. She's also delicious. Pairs perfect with your favorite grilled sammie on a cold night. Get the recipe here.

If all you do this week is repeat one nourishing meal, drink some water, and give yourself a little grace — that counts. Progress isn’t built in bursts of motivation; it’s built by showing up gently, again and again.

You don’t need to start over. You just need to keep going.

In health,

Um....BURR. I don't know where you are, but I'm guessing it's cold - because I'm in South Carolina and it's 20 degrees! We only got a little bit of snow, but we managed to make a tiny snowman. My son has named him Bob. Fun fact: Bob's scarf is made out of a scrap of fabric from a bridesmaid's dress I wore in my sister's wedding circa the early 90's. When my mom asked if I knew what it was I guessed an old couch. It looks like upholstery. 😂 Luckily those photos were before digital pictures...

Hi, and happy Saturday! Can we pause for a moment and talk about how we're only halfway through January? HALF. WAY. As in, we just finished the whole Christmas-New Years smorgasborg 2 weeks ago. It feels like months have passed! But -no. Here we are, 17 days into January, plugging along. In lieu of lofty, unmet goals and resolutions, the gym I coach at is doing something I used to do at my gym as well - we called it a "habit stacking" challenge. It works like this: The first week, you're...

Well, after this weekend's sweet potato harvest, I guess I'll be in charge of making sweet potatoes for Thanksgiving this year! I'm also cataloging all the other things I'll need to start making... Sweet potato smoothies. Sweet potatoes with tahini butter. Sweet potato salad with bacon. Sweet potato crust pizza. Sweet potato crust quiche. Chili and cinnamon roasted sweet potatoes. Twice baked sweet potatoes. If you have a favorite sweet potato recipe, send it my way! I'm going to need it....
